Ingredients

  • 3 cups fresh or canned peaches (peeled and sliced)
  • 1/3 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup milk
  • 1 teaspoon butter (softened, for greasing the pie plate)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9-inch pie plate with the softened butter.
  2. Arrange the peach slices evenly in the bottom of the pie plate.
  3. In a blender or bowl, mix the flour, sugar, baking powder, salt, eggs, vanilla, and milk until smooth (about 1–2 minutes).
  4. Pour the custard mixture evenly over the peaches in the pie plate.
  5. Bake for 40–45 minutes, or until the edges are golden and the center has a slight jiggle—it will finish setting as it cools.
  6. Let it cool for 15–20 minutes before slicing.
  7. Serve warm or chilled—delicious with whipped cream or vanilla ice cream.
