- 3 cups fresh or canned peaches (peeled and sliced)
- 1/3 cup all-purpose flour
- 3/4 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 4 large eggs
- 1 tablespoon vanilla extract
- 1 cup milk
- 1 teaspoon butter (softened, for greasing the pie plate)
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9-inch pie plate with the softened butter.
- Arrange the peach slices evenly in the bottom of the pie plate.
- In a blender or bowl, mix the flour, sugar, baking powder, salt, eggs, vanilla, and milk until smooth (about 1–2 minutes).
- Pour the custard mixture evenly over the peaches in the pie plate.
- Bake for 40–45 minutes, or until the edges are golden and the center has a slight jiggle—it will finish setting as it cools.
- Let it cool for 15–20 minutes before slicing.
- Serve warm or chilled—delicious with whipped cream or vanilla ice cream.
