- 2 pounds Yukon Gold potatoes, thinly sliced (about 1/8 inch thick)
- 3 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- 1/2 cup freshly grated Parmesan cheese
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
- 1 teaspoon fresh rosemary, finely chopped (or 1/2 teaspoon dried)
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- Fresh chives, for garnish
Instructions
- Preheat your oven to 400°F (200°C). Generously grease a 12-cup standard muffin tin with non-stick spray or butter.
- In a large bowl, combine the melted butter, minced garlic, Parmesan cheese, thyme, rosemary, salt, and pepper. Stir until well mixed.
- Add the thinly sliced potato rounds to the bowl. Toss everything together with your hands, ensuring each potato slice is evenly coated with the butter and herb mixture.
- Stack the potato slices in piles, then place each stack into a greased muffin cup. Press down gently to fit them in, allowing them to fan out slightly. Drizzle any remaining butter mixture from the bowl over the tops of the stacks.
- Bake for 45-50 minutes, or until the potatoes are fork-tender and the edges are golden brown and crispy. If the tops aren’t browning to your liking, you can broil them for an additional 2-3 minutes, watching carefully.
- Let the potato stacks cool in the pan for 5 minutes. Run a small offset spatula or knife around the edges to loosen them, then carefully lift them out. Garnish with fresh chives and serve immediately.
