Description

Delicious stacks of thinly sliced Yukon Gold potatoes baked to perfection with a buttery herb mixture.


Ingredients

  • 2 pounds Yukon Gold potatoes, thinly sliced (about 1/8 inch thick)
  • 3 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
  • 1 teaspoon fresh rosemary, finely chopped (or 1/2 teaspoon dried)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Fresh chives, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Generously grease a 12-cup standard muffin tin with non-stick spray or butter.
  2. In a large bowl, combine the melted butter, minced garlic, Parmesan cheese, thyme, rosemary, salt, and pepper. Stir until well mixed.
  3. Add the thinly sliced potato rounds to the bowl. Toss everything together with your hands, ensuring each potato slice is evenly coated with the butter and herb mixture.
  4. Stack the potato slices in piles, then place each stack into a greased muffin cup. Press down gently to fit them in, allowing them to fan out slightly. Drizzle any remaining butter mixture from the bowl over the tops of the stacks.
  5. Bake for 45-50 minutes, or until the potatoes are fork-tender and the edges are golden brown and crispy. If the tops aren’t browning to your liking, you can broil them for an additional 2-3 minutes, watching carefully.
  6. Let the potato stacks cool in the pan for 5 minutes. Run a small offset spatula or knife around the edges to loosen them, then carefully lift them out. Garnish with fresh chives and serve immediately.
