- 2 cups cooked chicken breast, shredded or diced
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup sweet pickles or relish (optional)
- 1/4 cup grapes, halved (optional)
Instructions
- Cook and shred the chicken breast. Rotisserie chicken also works well.
- In a large bowl, mix mayonnaise, mustard, lemon juice, salt, and pepper.
- Stir in chopped celery and onion.
- Add the cooked chicken to the bowl and gently mix until everything is coated.
- Add grapes, pickles, or apples if you like.
- Refrigerate for about 20 minutes before serving.
Notes
- You can use Greek yogurt and mayo together for a lighter version.
- Try avocado mayo for a creamy twist.
- Celery adds crunch to the salad.
