Description

This refreshing avocado salad is perfect for warm days and pairs well with tortilla chips or mixed greens.


Ingredients

  • 2 avocados, diced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 2 tbsp fresh cilantro, chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Optional: tortilla chips or mixed greens

Instructions

  1. In a large bowl, toss together the diced avocados, cucumber, cherry tomatoes, and red onion. Gently mix to avoid mashing the avocado.
  2. In a small bowl, whisk together the lime juice, olive oil, chopped cilantro, minced garlic, salt, and pepper until well combined.
  3. Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly. Ensure the salad is well-dressed without mashing any of the avocado.
  4. Serve immediately or let it chill for a few minutes to enhance the flavors.
