Description
A delicious turkey and brie sandwich topped with cranberry salsa and fresh arugula, perfect for a quick meal.
Ingredients

- 2 slices crusty bread
- 1 tablespoon butter
- 4 ounces sliced turkey
- 3 ounces brie cheese, thinly sliced
- 2 tablespoons cranberry salsa
- 1/2 cup fresh arugula or fresh spinach
Instructions
- Spread butter on one side of each slice of bread.
- Place one slice on a cutting board, buttered side down. Layer the brie, cranberry salsa, turkey, and greens on top.
- Cover with the second slice, buttered side up.
- Warm a sandwich press or skillet over medium heat. Cook the sandwich for 3–5 minutes, or until the outside is crisp and the cheese has melted. If using a skillet, flip halfway through and press lightly with a spatula.
- Slice and serve right away while the sandwich is warm and melty.

- This sandwich is great for lunch or a light dinner.
- Feel free to substitute other greens if desired.
