Description

A creamy and cheesy spinach artichoke dip that’s perfect for parties and gatherings.


Ingredients

  • 1 (8-ounce) bag fresh baby spinach (coarsely chopped)
  • 1 (8-ounce) package cream cheese (softened)
  • 1 tablespoon lemon juice (optional)
  • 1/2 cup mayo
  • 1/4 cup sour cream
  • 1 cup shredded sharp Cheddar cheese
  • 1 (14-ounce) can artichoke hearts (drained and chopped)
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup grated Parmesan cheese (see note 1)

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, combine all ingredients except for the Parmesan cheese. Stir until well mixed.
  3. Spoon the mixture into an 8×8-inch baking pan or a 2-quart casserole dish. Sprinkle the Parmesan cheese evenly on top.
  4. Bake for 35 minutes, or until the dip is hot and bubbly.
  5. Set the oven to broil and carefully broil for 1-2 minutes, or until the top is golden. Watch closely to avoid burning.
  6. Serve warm with pita chips, tortilla chips, toasted baguette slices, or your favorite dippers.
