Description

A delicious and healthy yogurt bark made with coconut yogurt, sunflower seed butter, and topped with dark chocolate, slivered almonds, and pumpkin seeds.


Ingredients

Scale
  • 1 cup yogurt (unsweetened coconut yogurt recommended)
  • 1/4 cup sunflower seed butter (or any nut butter)
  • 1 Tbsp maple syrup (optional)
  • 1/4 cup protein powder (pea protein recommended)
  • 2 Tbsp dark chocolate, melted
  • slivered almonds
  • pumpkin seeds

Instructions

  1. Line a baking sheet or large plate with parchment paper and set aside.
  2. In a large mixing bowl, combine the yogurt, sunflower seed butter, maple syrup, and protein powder. Mix until smooth.
  3. Spread the protein yogurt mixture over the parchment-lined baking sheet, about 1/4 inch thick.
  4. Melt the dark chocolate and drizzle it over the top of the yogurt mixture. If the chocolate is too thick to drizzle, mix in some coconut oil to thin it out.
  5. Add the slivered almonds and pumpkin seeds on top.
  6. Place the yogurt bark in the freezer for at least 2 hours to set. Depending on the thickness, it may need to freeze longer.
  7. Once frozen, cut the bark to the desired size and enjoy. Let it thaw for a few minutes before eating, as it can be quite firm when frozen.
  8. Store any leftovers in a sealed baggie in the freezer.

Notes

  • Using unsweetened coconut yogurt will give the best flavor.
  • Feel free to substitute the sunflower seed butter with your favorite nut butter.
  • If you prefer a sweeter bark, increase the maple syrup.
