Description
A delicious dessert made with glutinous rice, coconut milk, and ripe mangoes.
Ingredients
Scale
- 1 cup glutinous (sticky) rice
- 1 ½ cups coconut milk
- ½ cup granulated sugar
- ¼ teaspoon salt
- 2 ripe mangoes, peeled and sliced
- Sesame seeds or mung beans (optional, for garnish)
Instructions
- Rinse the glutinous rice under cold water until the water runs clear. Soak it in water for at least 3 hours or overnight.
- Drain the soaked rice and place it in a steaming basket lined with cheesecloth. Steam the rice over boiling water for approximately 20-25 minutes or until tender.
- While the rice steams, mix the coconut milk, sugar, and salt in a saucepan over medium heat. Stir until the sugar dissolves but do not boil.
- Once the rice is cooked, transfer it to a bowl. Pour 1 cup of the warm coconut sauce over the rice and stir gently to combine. Let it rest for about 10 minutes to absorb the flavors.
- Prepare the mango by peeling it and slicing it into thin wedges.
- To serve, place a portion of sticky rice on a plate, add slices of mango, and drizzle with the remaining coconut sauce. Garnish with sesame seeds or mung beans if desired.
Notes
- For best results, soak the rice overnight.
- Ensure the coconut milk mixture does not boil as it may affect the flavor.
