Description

Delicious balsamic chicken breasts roasted with colorful bell peppers and cherry tomatoes.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cloves garlic, minced
  • 1/2 cup balsamic vinegar
  • 2 tbsp honey
  • 1 cup cherry tomatoes, halved
  • 2 bell peppers (assorted colors), sliced
  • 2 tbsp extra virgin olive oil
  • 2 tsp fresh thyme (or rosemary)
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and gather all ingredients.
  2. In a bowl, mix balsamic vinegar, honey, garlic, soy sauce, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  3. Chop bell peppers and halve cherry tomatoes; arrange around the marinated chicken in a large baking pan.
  4. Drizzle olive oil over the chicken and veggies; toss gently.
  5. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C).
  6. Sprinkle fresh herbs on top before serving.

Notes

  • For a flavor boost, let the chicken marinate longer if possible.
  • You can substitute the fresh herbs with dried ones if needed, just use less.
