Delicious balsamic chicken breasts roasted with colorful bell peppers and cherry tomatoes.
Ingredients

- 4 boneless, skinless chicken breasts
- 4 cloves garlic, minced
- 1/2 cup balsamic vinegar
- 2 tbsp honey
- 1 cup cherry tomatoes, halved
- 2 bell peppers (assorted colors), sliced
- 2 tbsp extra virgin olive oil
- 2 tsp fresh thyme (or rosemary)
- 2 tbsp low-sodium soy sauce
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and gather all ingredients.
- In a bowl, mix balsamic vinegar, honey, garlic, soy sauce, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
- Chop bell peppers and halve cherry tomatoes; arrange around the marinated chicken in a large baking pan.
- Drizzle olive oil over the chicken and veggies; toss gently.
- Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C).
- Sprinkle fresh herbs on top before serving.
Notes
- For a flavor boost, let the chicken marinate longer if possible.
- You can substitute the fresh herbs with dried ones if needed, just use less.
