- 1 cup long-grain rice (basmati recommended)
- 2 tablespoons extra virgin olive oil
- 1 medium onion, finely chopped
- 4 garlic cloves, minced
- 1 cup diced tomatoes (fresh or canned)
- 2 cups vegetable or chicken broth
- 2 tablespoons fresh lemon juice
- Salt and pepper to taste
- ¼ cup chopped fresh parsley
Instructions
- Heat olive oil in a large saucepan over medium heat. Sauté the chopped onion and minced garlic for 3-5 minutes until fragrant and translucent.
- Stir in the long-grain rice, coating each grain with oil. Toast for about 2 minutes until slightly golden.
- Add diced tomatoes, broth, lemon juice, salt, and pepper to the pot. Bring to a boil.
- Reduce heat to low, cover tightly, and simmer for 15-20 minutes until all liquid is absorbed.
- Remove from heat and let stand covered for an additional 5 minutes. Fluff with a fork and garnish with fresh parsley before serving.
Notes
- This rice can be served as a side dish or as a base for grilled chicken or fish.
- Adjust the seasoning to taste, adding more lemon juice for a tangier flavor.
