- 1 pound ground beef
- 8 corn tortillas
- 1 can (10 ounces) enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 large onion, finely chopped
- 1 large green bell pepper, diced
- 1 large red bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ¼ cup fresh cilantro, chopped (for garnish)
Instructions
- Heat a large skillet over medium heat. Brown the ground beef with salt, pepper, chili powder, and cumin. Remove from skillet.
- In the same skillet, sauté chopped onion and diced bell peppers until softened. Add minced garlic and cook briefly.
- Return beef to the skillet. Stir in tortilla strips and enchilada sauce until well combined.
- Sprinkle cheeses over the top. Cover and let cook on low heat until cheese melts (5-7 minutes).
- Garnish with fresh cilantro before serving.
Notes
- Feel free to add additional toppings like sour cream or sliced jalapeños.
