Description

A quick and delicious beef enchilada skillet dinner, perfect for busy weeknights!


Ingredients

  • 1 pound ground beef
  • 8 corn tortillas
  • 1 can (10 ounces) enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 large onion, finely chopped
  • 1 large green bell pepper, diced
  • 1 large red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ¼ cup fresh cilantro, chopped (for garnish)

Instructions

  1. Heat a large skillet over medium heat. Brown the ground beef with salt, pepper, chili powder, and cumin. Remove from skillet.
  2. In the same skillet, sauté chopped onion and diced bell peppers until softened. Add minced garlic and cook briefly.
  3. Return beef to the skillet. Stir in tortilla strips and enchilada sauce until well combined.
  4. Sprinkle cheeses over the top. Cover and let cook on low heat until cheese melts (5-7 minutes).
  5. Garnish with fresh cilantro before serving.
