A delicious homemade pho recipe made with chicken, spices, and fresh herbs.

- 1 pound chicken breast or thighs, boneless and skinless
- 6 cups chicken broth
- 1 onion, halved
- 1 piece ginger (2 inches), sliced
- 3–4 star anise pods
- 1 cinnamon stick
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- Salt to taste
- 8 ounces rice noodles (bánh phở)
- Fresh cilantro, chopped
- Fresh basil leaves
- Lime wedges
- Sliced jalapeños (optional)
- Bean sprouts (optional)
Instructions
- In a large pot, combine the chicken broth, halved onion, sliced ginger, star anise, and cinnamon stick. Bring to a boil over medium-high heat.
- Once boiling, add the chicken to the pot. Reduce the heat and let it simmer gently for about 20-25 minutes until the chicken is cooked through.
- Stir in the fish sauce and sugar. Taste and adjust the seasoning with salt if needed.
- While the chicken is cooking, prepare the rice noodles according to the package instructions. Drain and set aside.
- Remove the cooked chicken from the pot and shred it using two forks. Set aside.
- Discard the onion, ginger, and whole spices from the broth to ensure a smooth texture.
- In each bowl, place a portion of cooked rice noodles at the bottom. Top with shredded chicken.
- Pour the hot broth over the noodles and chicken until the bowl is filled.
- Add fresh cilantro, basil leaves, lime wedges, and sliced jalapeños or bean sprouts as desired.
- Serve immediately and enjoy your delicious homemade pho!

- For a richer flavor, allow the broth to simmer longer with the spices.
