Description

Ingredients

  • 2 chicken breasts
  • 1 cup quinoa
  • 2 cups broccoli florets
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse quinoa under cold water.
  3. Cook quinoa according to package instructions.
  4. In a skillet, heat olive oil over medium heat.
  5. Add minced garlic and sauté for 1 minute.
  6. Add chicken breasts, season with salt and pepper, and cook for 6-7 minutes on each side until cooked through.
  7. Add broccoli florets to the skillet and cook for an additional 5 minutes.
  8. Drizzle lemon juice over the chicken and broccoli.
  9. Serve chicken with quinoa and broccoli.
