A delicious and healthy chicken quinoa bowl with broccoli.
Ingredients

- 2 chicken breasts
- 1 cup quinoa
- 2 cups broccoli florets
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Rinse quinoa under cold water.
- Cook quinoa according to package instructions.
- In a skillet, heat olive oil over medium heat.
- Add minced garlic and sauté for 1 minute.
- Add chicken breasts, season with salt and pepper, and cook for 6-7 minutes on each side until cooked through.
- Add broccoli florets to the skillet and cook for an additional 5 minutes.
- Drizzle lemon juice over the chicken and broccoli.
- Serve chicken with quinoa and broccoli.
Notes
- Ensure chicken is cooked to an internal temperature of 165°F (74°C).
- Feel free to add other vegetables or seasonings as desired.
