Description

A delicious and crispy baked dish made with grated potatoes and a blend of cheeses.


Ingredients

  • 1 medium potato, grated
  • 3/4 cup all-purpose flour
  • 1/3 cup water
  • 3 ounces grated halloumi cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup grated cheddar cheese
  • 2 teaspoons fresh thyme
  • 1 tablespoon olive oil
  • to taste Salt and black pepper
  • Olive oil for greasing the pan

Instructions

  1. Wash, peel, and grate the potato using the coarse side of a grater.
  2. Place the grated potato in a bowl of cold water and gently stir for about 30 seconds to loosen excess starch.
  3. Drain thoroughly and squeeze out as much liquid as possible with a clean towel or fine strainer to ensure crispiness.
  4. Transfer the dried potato to a mixing bowl.
  5. Add the flour, water, halloumi, parmesan, cheddar, thyme, olive oil, salt, and pepper. Stir until the mixture is evenly combined and thick.
  6. Lightly grease an oven-safe dish or cast iron pan with olive oil.
  7. Spread the mixture evenly in the pan and smooth the top.
  8. Drizzle a small amount of olive oil over the surface to help it crisp while baking.
  9. Bake at 350°F for about 45 minutes, or until the top is golden and crisp.
  10. Let it cool slightly, remove from the pan, slice, and serve warm. Add more thyme or cheese on top if desired.
