  • 2 (15 oz) cans white beans, drained and rinsed
  • 2 1/2 cups cooked shredded chicken
  • 2 cups low-sodium chicken broth
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • Optional toppings: shredded cheese, avocado slices, fresh cilantro, lime wedges, crushed tortilla chips, jalapeño slices

Instructions

  1. Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 4–5 minutes. Stir in the garlic and cook for another 30 seconds until fragrant.
  2. Add spices and chiles: Mix in cumin, oregano, chili powder, and cayenne (if using). Cook for a minute to toast the spices, bringing out their depth. Then stir in the diced green chiles.
  3. Build the base: Add white beans, shredded chicken, chicken broth, salt, and pepper. Stir everything together and bring it to a gentle simmer. Let it cook uncovered for 15–20 minutes to let the flavors meld beautifully.
  4. Make it creamy: Reduce the heat to low. Stir in softened cream cheese until fully melted and incorporated. Then add sour cream, stirring until the chili is creamy and luscious.
  5. Serve and garnish: Ladle into bowls and top with your favorite garnishes—cheddar cheese, avocado, fresh cilantro, a squeeze of lime, or crunchy tortilla strips. Every topping adds texture and brightness that complements the chili’s richness.
