- 1 lb large shrimp peeled and deveined
- 2 tbsp olive oil
- 1 small onion chopped
- 3 cloves garlic minced
- 1/2 tsp red pepper flakes
- 1/2 cup sun dried tomatoes
- 1 cup heavy cream
- 1/2 cup grated Parmesan
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- 2 tbsp chopped parsley
Instructions
- Heat olive oil in a large skillet over medium heat then sauté onion for 4 minutes until soft.
- Add garlic and red pepper flakes and cook for 30 seconds while stirring.
- Add shrimp season with salt and pepper then cook 2 minutes per side until pink.
- Stir in sun dried tomatoes, cream, and Italian seasoning then simmer for 5 minutes.
- Add Parmesan stir until thickened then garnish with parsley and rest before serving.
