Description

Delicious churro cookies coated in cinnamon sugar that are soft and buttery on the inside.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • ¼ cup brown sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla extract
  • ½ cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Baking churro cookies always reminds me of cool evenings when the kitchen becomes the warmest place in the house. The smell of cinnamon slowly filling the room is part of the magic, and it begins with the simplest step—mixing the dry ingredients.
  2. Start by whisking together the flour, baking powder, baking soda, salt, and cinnamon in a medium bowl. This mixture forms the base of the cookies and gives them that subtle spiced warmth.
  3. In a separate large bowl, beat the softened butter with the granulated sugar and brown sugar until light and fluffy. This step creates the soft, tender texture that makes these cookies so irresistible. Add the egg, egg yolk, and vanilla extract, mixing until smooth and creamy.
  4. Gradually incorporate the dry ingredients into the wet mixture. Stir until a soft dough forms. The dough should feel smooth and slightly thick.
  5. In a small bowl, combine the sugar and cinnamon for the coating. Scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball generously in the cinnamon sugar mixture so every side is coated.
  6. Place the dough balls on a lined baking sheet, leaving space between them.
  7. Bake at 350°F (175°C) for about 10–12 minutes. The edges should look lightly golden while the centers remain soft.
  8. Once baked, let the cookies cool slightly before serving. The cinnamon sugar coating will create that classic churro flavor while the inside stays soft and buttery.
