Description

A delicious Caesar chicken salad with grilled chicken, romaine lettuce, and homemade dressing.


Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 4 cups chopped romaine lettuce
  • ½ cup Caesar dressing
  • ¼ cup freshly grated Parmesan cheese
  • 1 cup croutons
  • 2 cloves fresh garlic, minced
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tbsp olive oil
  • Freshly cracked black pepper (to taste)

Instructions

  1. Grill the Chicken: Preheat your grill or stovetop grill pan over medium heat. Season chicken breasts with salt and pepper. Grill for about 6-7 minutes per side until cooked through and juices run clear. Let cool, then slice into strips.
  2. Prepare the Dressing: In a bowl, whisk together minced garlic, mayonnaise, lemon juice, olive oil, Worcestershire sauce, Parmesan cheese, salt, and pepper until smooth.
  3. Toss the Lettuce: In a large bowl, add chopped romaine lettuce. Drizzle with half of the prepared dressing and toss gently.
  4. Add Chicken and Croutons: Place sliced chicken on top of the dressed lettuce along with croutons. Drizzle remaining dressing over everything for added flavor.
  5. Finish with Parmesan: Top the salad with extra grated Parmesan cheese and freshly cracked black pepper to taste before serving.
