Delicious cookies with a unique ginger flavor and white chocolate chips.
Ingredients

- 2 cups (400g) all-purpose flour
- 1 teaspoon (5g) baking soda
- 1/2 teaspoon (2g) salt
- 1 cup (200g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 3/4 cup (150g) packed brown sugar
- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- 2 teaspoons (10g) ground ginger
- 1 teaspoon (5g) ground cinnamon
- 1/4 teaspoon (1g) ground cloves
- 1/2 cup (100g) white chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and cloves. Set aside.
- In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- Gradually mix in the dry ingredients until just combined. Fold in white chocolate chips.
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
- Bake for 10-12 minutes, or until edges are lightly golden but centers are still soft.
- Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a chewier cookie, do not overbake.
- Store in an airtight container for up to one week.
