Description

A refreshing and sweet salad made with grated carrots, plump raisins, and a tangy dressing.


Ingredients

Scale
  • 1 1/2 cups raw grated carrots
  • 1/2 cup raisins (soaked in warm water until plump, then drained)
  • 1 large orange (peeled and cut into small cubes)
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 12 teaspoons white sugar

Instructions

  1. Combine the first three ingredients in a medium bowl.
  2. In a small bowl, add the dressing ingredients. Mix until combined. Taste test and see if you want it sweeter, or tangier at this point, and add more sugar or lemon juice.
  3. Once the dressing is mixed, add to the other ingredients and mix until completely incorporated.
  4. Refrigerate until serving.

  • Adjust the sweetness and tanginess of the dressing according to your taste by adding more sugar or lemon juice.
