- 2 ripe plantains
- 1 can (14 ounces) coconut milk
- 1 tablespoon curry powder
- 1 onion, chopped
- Salt and pepper to taste
Instructions
- Peel the ripe plantains and cut them into thick slices.
- In a large pan, heat a little oil over medium heat, then add the chopped onion. Sauté until the onion is translucent and fragrant.
- Stir in the plantain slices and cook for about 5 minutes, allowing them to brown slightly.
- Sprinkle the curry powder over the plantains and mix well until they are coated in spice.
- Add the can of coconut milk into the pan, stirring to combine. Bring the mixture to a gentle simmer.
- Add salt and pepper to taste. This enhances the flavors beautifully.
- Allow the curry to cook for about 20 minutes, or until the plantains are tender and the sauce thickens slightly.
- Remove the curry from heat, and it’s ready to enjoy!

- This dish is delicious served over rice or with crusty bread.
- Adjust the spice level by adding more or less curry powder.
