Ingredients

  • 2 ripe plantains
  • 1 can (14 ounces) coconut milk
  • 1 tablespoon curry powder
  • 1 onion, chopped
  • Salt and pepper to taste

Instructions

  1. Peel the ripe plantains and cut them into thick slices.
  2. In a large pan, heat a little oil over medium heat, then add the chopped onion. Sauté until the onion is translucent and fragrant.
  3. Stir in the plantain slices and cook for about 5 minutes, allowing them to brown slightly.
  4. Sprinkle the curry powder over the plantains and mix well until they are coated in spice.
  5. Add the can of coconut milk into the pan, stirring to combine. Bring the mixture to a gentle simmer.
  6. Add salt and pepper to taste. This enhances the flavors beautifully.
  7. Allow the curry to cook for about 20 minutes, or until the plantains are tender and the sauce thickens slightly.
  8. Remove the curry from heat, and it’s ready to enjoy!
